Advanced Raw Chocolate: Level 1
(This one day intensive class will be offer on two dates )

This class is specifically designed to enable the student to gain a deep understanding of the ingredients with which you are working. You will leave this class with a solid set of base recipes from which to develop your own unique confections. It’s important to us that you leave the class feelings confident and inspired and we strive to create an environment which encourages that outcome.
Studies have shown that 65% of us are practical learners therefore, eighty percent of the class is hands on, helping the student to learn and absorb the content on both a practical and theoretical level. You are given a book containing all the recipes and techniques used during the class, plus some extras. Amy is available via email after the class to support you by answering any questions you may have or helping you to problem solve any issues which may arise.

You will learn professional chocolate making techniques including, but not limited to -
- Filled Chocolates
- Truffles
- Pralines
- Professional Tempering Techniques
- Creating Textures in Chocolate
- Coloured chocolate for decoration
- Milk, Dark and White Chocolate

Lunch will be available to purchase from the cafe on Saturday and we will provide a simple salad and crackers for lunch on Sunday, as the cafe is closed.

Amy is a classically trained professional chef who found her way into vegan and vegetarian raw food 6 years ago while training to be a holistic health counselor at The Institute of Integrative Nutrition. After working for several of the UK’s most respected raw food & chocolate companies, Amy was able to apply that new found talent and knowledge to her role as Senior Sous and Pastry Chef to World Renowned Executive Chef, Chad Sarno at Saf London & Munich during their opening years. Amy currently teaches Advanced Raw Chocolate classes from her home in East Sussex and through the UK and North America and consults with businesses who wish to implement only the very best raw chocolates and desserts into their menu/product line.
